Sarges' Smokehouse BBQ was founded in June of 2013 by Ken and Brian, with Chris joining the team soon after, long-time friends who served together at MacDill AFB. All retired now, we combined our years of experience to develop a unique style of Southern BBQ, with highlights from St. Louis to Memphis, Texas to the Carolinas. Hello Christina, I was the one who served you at the window, and I'm one of the owners of Sarge's Smokehouse BBQ. We would never intentionally give any customer an uncooked product. You opened the ribs right in front of me and they looked fully cooked, but of course couldn't see the inside of the rib. If another customer before you ordered ribs, they would've also (unfortunately) received the same ribs. I've been to many restaurants before, and have had to send back food that wasn't fully cooked. We just met Sarges BBQ for the first time tonight at Hernando County's Fiesta. What a fantastic find! Hubby and I tried the Brisket Boat with beans and slaw. When I say it was amazing I mean every bite of every item with-in the boat was pure perfection! Thank you and we can't wait to find y'all again! :)
