Beardslee Castle might seem a bit out of place in the woods near the Adirondacks, but this fine dining establishment in the Hudson Valley offers a traditional American menu with Asian and Mediterranean influences. Built in the 1860s, the castle remained a private residence until the 1940s when it opened as "The Manor" and allowed in visitors. Beardslee opened in its current incarnation in 1994. Grilled mushroom-pepper bruschetta without the Gorgonzola bleu will be my go to appetizer every time, I wish I had ordered another to go! Eggplant fritters were the best breaded eggplant dish I have ever had. Peaches and cream was delicious and gorgeous! Service was perfect! Looking forward to next time!!!

I visited Beardslee Castle with my boyfriend this weekend and we had a wonderful time. I highly recommend arriving at least an hour before your reservation so you can grab a drink in the dungeon before you head upstairs to eat. Exploring the dungeon and the dining room were the best part of the experience! Also, the food was good and reasonably priced ($24 for prime rib, $28 for skirt steak) for an establishment with such a high amount of tourism.
