Beardslee Castle might seem a bit out of place in the woods near the Adirondacks, but this fine dining establishment in the Hudson Valley offers a traditional American menu with Asian and Mediterranean influences. Built in the 1860s, the castle remained a private residence until the 1940s when it opened as "The Manor" and allowed in visitors. Beardslee opened in its current incarnation in 1994.
