Beardslee Castle might seem a bit out of place in the woods near the Adirondacks, but this fine dining establishment in the Hudson Valley offers a traditional American menu with Asian and Mediterranean influences. Built in the 1860s, the castle remained a private residence until the 1940s when it opened as "The Manor" and allowed in visitors. Beardslee opened in its current incarnation in 1994. One of my favorate places in the area. I live right up the road I also helped my wife do a masters paper on the Bearsee family history in 1969

The only constructive criticism I have is that there aren’t enough bartenders in the downstairs bar. The wait staff does both tables and the bar, we waited more than 20 minutes to get a glass of wine at the bar. Otherwise it was a good dining experience.

It is interesting that people have had quite a wide variety of experiences at this restaurant. The food for us was delicious the setting was perfect the atmosphere was very nice. But one complaint I would have is that the food was not hot. Including the hot tea was tepid at best. They need to address this problem of not having food and liquids hot that are supposed to be hot.

This has been our "go-to" place for Christmas gatherings, birthdays, etc for at least 7 years now, but I really wanted everyone to know how great our service was yesterday in particular. We chose to eat downstairs in the "dungeon" because our kids prefer the pub food served there. The bartender also doubled as our waitress, which I assume isn't a big deal most Thursdays.
