Beardslee Castle might seem a bit out of place in the woods near the Adirondacks, but this fine dining establishment in the Hudson Valley offers a traditional American menu with Asian and Mediterranean influences. Built in the 1860s, the castle remained a private residence until the 1940s when it opened as "The Manor" and allowed in visitors. Beardslee opened in its current incarnation in 1994. It was wonderful. The food was delicious and cooked just right. The Amoretto sour was the best. We would definitely go back again.

I went during restaurant week so they had specials. The atmosphere was amazing. The food,phenomenal! I had the chicken vegetable soup, best soup I’ve ever had! I also had the maple salmon and rice pilaf,delicious. I also had the creamy cheesecake with strawberry drizzle- perfect!!
