Torchy's Tacos started in 2006 with a mobile trailer, a little red Vespa, and a man with a passion for good food. The founder, Mike Rypka, left an executive chef position to chase his dreams by investing everything he had into Torchy's Tacos. With a new, experimental menu ready to serve but no mouths to feed, Rypka jumped on his Vespa and started throwing out samples in an attempt to draw customers to his trailer. PSA: Avoid Torchy’s in the Heights today (19th st). My co-worker and I went this morning before our shift, we ordered inside and told them it was a to go order. They took my money ($21) and then told us we had to go outside and wait for our food. We had been the only people there when we ordered, but outside noticed a ton of cars and people waiting. Love our bartender Jimmy! He makes us drinks that he makes up and they are always on the money! The Hillbilly Queso is MY FAVORITE thing on the menu and we ALWAYS order it with our cocktails. We are weekly patriots now :)
