Beardslee Castle might seem a bit out of place in the woods near the Adirondacks, but this fine dining establishment in the Hudson Valley offers a traditional American menu with Asian and Mediterranean influences. Built in the 1860s, the castle remained a private residence until the 1940s when it opened as "The Manor" and allowed in visitors. Beardslee opened in its current incarnation in 1994. I officiated my nieces wedding there and was beautiful

Romantic atmosphere, usage of local produce/meat, chef inspired recipes, extensive wine list, top of the class service, with a few ghost story goosebumps, earns this Castle a 5. Great locale for weddings and banquets. I shall return and spread the word.

My favorite lay over spot as I travel east to Boston. Great food and a wonderful atmosphere. Don't forget to head down to the underground bar scene after dinner, stroll the grounds and breathe in the moonlight. The staff are wonderful and welcoming. One of a kind.
