What used to be an old pineapple cannery is now Mala, the epitome of global organic fusion cuisine. It's not as complicated as it sounds. Chef Mark Ellman has his concepts straight: keep everything fresh, quantities adequate, use organic ingredients as much as possible and use no hydrogenated oils or preservatives. The staff greeted us with the aloha spirit and offered great recommendations once we told them what taste experience we were seeking. Starting with a hibiscus mimosa, we thoroughly enjoyed our lunch. The seasoning and preparation of the ahi bruschetta and the greek pitta wrap was super. The ocean-side location is unbeatable.
