Opened in 1982, this small company specializes in the art of cheese-making, and it's all done by hand, from scratch. Wonderful class, made three different cheeses and tasted them all after class with wine and that great Empire Bakery bread! Wonderful experience! I have been wanting to go to this cheese making class for a couple years now and I finally did and I had the best day ever!!! So much fun! Informative, hands on, a fun way two spend two hours on a Saturday... I see they also have cheese and wine and/or tequila pairings.. going to try that next!

Just finished a cheese making class at the perrenial Dallas cheese institution. Had a blast and got to sample a bunch of their delicious (& award winning) cheeses. We all had a blast!
Ronald Rogers and I went to the cheese class today and met some wonderful people, made some wonderful cheese and learned so much life. Paula and her team were wonderful and informative. Highly recommend the class\tour. A treasure in Deep Ellum.
