Quintessence is NYC's longest-lived raw vegan restaurant and I was lucky to live within a 10-minute walk from it until I moved out of the city to south Florida, where I keep wishing they would open a branch near me! Raw Chef Dan is the creative genius chef who comes up with magical recipes in all types of ethnic cuisines. My only caveat is that they use Irish moss in some recipes and according to scientific studies, it (and carrageenan, which is made from it) is not a healthful ingredient). I went there this last July and I was blown away with the awesome flavors, hard to believe it was raw!! Hope to return when I'm back NY!
