It seems that almost every pizzeria now is using the traditional wood-fired, Neapolitan style of making pies, and this one is no exception. Guests have their choice of white or red pizza; some of the 'bianche' include the 'Quattro Formaggi' (four cheese), the Primavera with asparagus, English Pea, speck (bacon) and egg or the popular 'Mais', which is a masterpiece of raw Prosciutto, sweet corn, crème frâiche and garlic. I used to be a cook, and bar none, Locale is the best place to satisfy both palate and tummy per dollar in the north Metro area.
The Mais pizza, Mercato salad and Budino dessert make the perfect dinner.
Fabulous food, great atmosphere, will visit again
Pizzeria Locale has gone way downhill in terms of quality of: service, preparation and ingredients... I used to drive from Fort Collins to Boulder to go to Locale when they opened, but the size of pizza, the quantity and the quality of ingredients and especially the amount of service is non-existent today by comparison. I live in Boulder today and will not return until serious changes to this "restaurant" are initiated...
No other pizza comes close. Unless maybe you happen to be in Italy. I recommend sitting at the pizza bar and watching the magic on a date with your sweetie.
