You are correct that the fat that we use is the fat from the cashew nuts, and not only do cashews have a lower fat content than most other nuts, approximately 82% of their fat is unsaturated fatty acids, plus about 66% of this unsaturated fatty acid content are heart-healthy monounsaturated fats, similar to those found in olive oil. I love their ice cream. I use to buy pints of ice cream at our local Whole Foods. Too bad they don't sell Mr Dewie's ice cream anymore. Great excuse to visit Albany. Totally worth the trip.
