Found your cashew ice cream at a store in Salem, Oregon. What a treat! I bought the chocolate flavor. I can't consume dairy, soy, grains, eggs, almonds, preservatives, etc. due to numerous food intolerances, fibromyalgia, etc. I really wish you had vanilla, because I've had to eliminate caffeine in my diet as well. I also wonder if you tried using coconut brown sugar which has a lower sugar glycemic index as compared to cane sugar. I do really like that it's all Organic! Laurie, thanks for your interest and feedback. Unfortunately we are unable to use the coconut palm sugar for the other three flavors simply due to the distinct flavor profile of this sugar. Believe me...We've tried :-)
