The restaurant either doesn't understand, or doesn't care about people with dietary restrictions and food allergies. I'm a vegan and I visited with a vegetarian and a person with Celiac disease. Even though the servers knew about our needs, all three of us were given foods that were inappropriate for our diets. One server lied and told me that the black beans were vegan, but then another server told me they're actually made with chicken broth.
