La Panza Cafe takes me back to when I lived in Albuquerque. I order the chicken enchiladas Christmas style. Hands down the best New Mexican food in PDX.

Shhh! Don't tell anyone! Totally legit New Mexican cuisine is hiding out in Portland! The red and green chile sauce rivals that of some of the best New Mexican restaurants in Santa Fe! As a New Mexico transplant living in Seattle, I now must acknowledge I have Portland envy! I may just have to make the drive to Portland more often just to get my fix!
