David and Fang Chiang opened the first Thousand Crane in Manchester, NH in 2002. A decade later they sold the business and started Thousand Crane II in Nashua. Looking for a more personable atmosphere (and wanting to share authentic Taiwanese cuisine) they moved right across the street, where they opened their third restaurant, aptly named "Crane".
