Dry packed sea scallops. If you've only ever tried to sear scallops from a grocery store, or from one of those huge bags from a big-box-store, you've undoubtedly been disappointed as they released all of the phosphate water and steam themselves without getting a proper crust. The scallops we picked up from Clancey's yesterday were arguably some of the best we've ever had. Be advised... they are HUGE and only 3-4 are necessary for a serving.
