The Ashby Confections Chocolate Shoppe specializes in handmade artisan chocolates and other treats. We make a variety of truffles, caramels, marshmallows, pate de fruits, hot chocolate and more. We use exclusively organic dairy products and many other fresh, local, organic ingredients such as Meyer lemons, lavender flowers, strawberries and watermelon. Some of the chocolate that we use is organic and some isn't, but it is all very high quality. Quality is extremely important and we take it very seriously.

Ashby Confections is amazing. She graciously donated chocolate for our fundraiser. They flew off the tray in minutes! Everyone loved them and couldnt get enough of them. Visit them near scotts valley market! Amazing!!
Flavor combinations are otherworldly!
My husband travels and brings me home chocolates from all over the globe. These are my favorites! It is a must stop when he is in the area!! The flavors are so true and perfectly balanced. I am typically a milk chocolate fan so was amazed to find additionally here the "dark" is not bitter at all, but richer and always the perfect match with whatever confectionery treat has been created. One of my most important stops every time I am in the area. I travel around the world for work, and like to bring my wife fine chocolates. Ashby is her favorite.
I was fortunate to meet Jennifer and get introduced to her lovely sweet decadent chocolate confections at a Valentine's Day Dinner gathering. Now, will plan to make a pit stop at her shop in Scott's Valley each time I head over the hill to the coast from Silicon Valley.
