We started out in a food concessions trailer at The Salem Saturday Market in 1998. Soon, our popular house-smoked meats outgrew that space, and we opened up Adam's Rib Smokehouse in 2003. Since opening those doors, locals haven't been able to get enough of our low-and-slow-smoked beef and pork ribs and homemade sides. I had been going to Adam's Ribs for years. Great food and service. I strongly rebuke those that do not respect others freedom of speech. I support the 2nd Amendment and due not judge those who disagree. Large portions. Delicious food. Several diverse options for sauces. Mostly appreciate the service. The staff was incredibly friendly and helpful. We will be back!
Had the 4 meat combo. The pork ribs were undercooked and tough..not even close to falling off the bone. The brisket was shredded instead of sliced. It was dry and tasteless. No spices or bark. The little 3 inch piece of Kielbasa was ok. The ham left a lot to be desired, too. Dry, no flavor and definitely not bone in. The fries and the coleslaw were great. The texas toast was a big slab of cheese and grease. Won't be back

Absolute crap. $33 for lunch. The pork was fatty and so greasy that the bottom bun was saturated and fell apart. The fries were old and greasy, the hush puppies were burnt black, the smoked salmon was cleaned well but it was soft, like it was old. I would not recommend this place to anyone.
