Torchy's Tacos started in 2006 with a mobile trailer, a little red Vespa, and a man with a passion for good food. The founder, Mike Rypka, left an executive chef position to chase his dreams by investing everything he had into Torchy's Tacos. With a new, experimental menu ready to serve but no mouths to feed, Rypka jumped on his Vespa and started throwing out samples in an attempt to draw customers to his trailer. Loved the concept and the classic rock music. However, I would make some changes. Since you order the tacos a la carte, it gets kinda' pricey if you want three or four tacos. I would suggest that they offer a three taco plate, instead of having to order each taco separately. Also, it would be great if they offered flour tortillas as an option with each type of taco, instead of serving corn tortillas almost exclusively. There should also be an option to get crunchy tacos for those of us who are not as crazy about soft tacos. ... read more
