Excellent company to deal with and excellent products.
I love your miso! Does anyone know what the maximum temperature the soup should be in order to keep the good cultures alive?

Deanna~ I spoke with a microbiologist who said plants can live growing in temperatures nearing 150 degrees F. Raw foods folks tell me 140 is an ideal temperature to stay below to assure the most living cultures. ~Robin
The miso is the best anything I have ever eaten. I have met the owner and he clearly demonstrates how good principles and traditional preparation go a long way to making good food.
Fantastic... the best Miso I have ever eaten.. use it every day in many different dishes.
