Chef Shinji's style is his creation of sauces to accompany the different flavors of fish. Rather than having to use soy sauce the guests get to enjoy Chef Shinji-san various varieties of sauces such as; yuzu soy, truflle oil, garlic olive oil, citrus ponzu, apple vinaigrette and much much more.
