What used to be an old pineapple cannery is now Mala, the epitome of global organic fusion cuisine. It's not as complicated as it sounds. Chef Mark Ellman has his concepts straight: keep everything fresh, quantities adequate, use organic ingredients as much as possible and use no hydrogenated oils or preservatives. Incredible ambiance, food, service!! Great eggs benny for brunch on the weekends and I just got the ahi bruschetta appetizer that literally blew all other ahi dishes I've had out of the water! No pun intended ;)
