RecommendedOne bite of the fried rice and I was back home in my Mom’s kitchen. She would use regular steamed rice from the night before to make what would be one of my all-time fav comfort foods. That is the trick: an overnight in the fridge dries out the rice just enough so the texture is perfect when fried up. After the meal, the bartender revealed that they use rice steamed the day before. This warmed my heart. Thanks, Mom! Thanks Liholiho Yacht Club!
