A komali, which literally means 'an open fire griddle,' is usually used by the Mexican people to prepare tortillas and toast cacao beans for coffee. Chef Salum makes efforts to distinguish the authentic Mexican cuisine from the popular Tex-Mex cuisine by serving upscale yet still traditional preparations of south of the border favorites like the legendary Mole Negro served over chicken.
