RecommendedThe Heavy Whipping Cream with just cream works so much better for making chocolate truffles. The additives in ultra-pasteurized whipping cream to keep it from separating cause my chocolate truffles to have a grainy texture, but the texture is super smooth with the just cream Heavy Whipping Cream. It doesn't keep as long as the ultra-pasteurized, but the truffles turn out so much better.
