I had New York strip my husband had shrimp they were both super awesome! cooked to perfection

Never in my life have I seen a steakhouse struggle with the how to cook a steak. I get it medium, it’s done medium rare and they just say “we cook our steaks different” like what? What steakhouse just decides to change what the doneness of a steak is? Ok whatever so I get a medium well on the next go and it’s actually cooked medium well so great, now it’s too done for my liking.
