Sushi | Bar is a polished, high-touch omakase that gets some fundamentals right. Fish quality is excellent, knife work is clean, and the rice hits the sweet spot for temperature, grain, and seasoning. On paper that should add up to a terrific meal. In practice the experience is compromised by a garnish playbook that repeats itself course after course until the signal gets lost. Fire alarm went off for like 45 minutes making our dinner start late but the staff were nice about it. What wasn’t nice was the sommelier forgetting about us and subsequently giving us three glasses of sake at once. For a $100 pairing each, being forgotten about and then expected to basically chug sake to catch up on the tasting at an elegant dinner is unacceptable. Not much of a pairing.
