I'm simply blown away at how good these collards are and that's the simplest piece of this meal. Redbeans & Rice are so exactly perfect I can't praise them enough. Today's special Meatloaf was a good choice! I want you to know, you natives of Colorado Springs are bless to have this man's cooking in your community! Now when I come up from Texas I know where to get me a plate.
Being a native of the south, I'd consider my standards for soul food a high one. My wife and I are blown away every time we go to his restaurant, order his food, or cater family events. We've had out of town guests that agreed his ribs and fried chicken are "the best they've ever had." Also, you're a fool if you skip his banana pudding.
