Ruby s Diner was established in 1980, after junior-high buddies Doug Cavanaugh and Ralph Kosmides renovated a dilapidated building on the end of Balboa Pier in Newport Beach, Calif. The 1940s-style restaurant, which was located in a former bait shop, became an immediate hit, taking in $600,000 in the first year. In the second year, sales exceeded $1 million.
