I absolutely love this Rubio’s in Vista! Ever since most of the locations closed down after COVID, this one has become a true gem. The food is always fresh, flavorful, and consistent. My absolute favorite is the classic shrimp burrito—it’s perfectly seasoned and so satisfying just make sure to ask for easy on the rice sometimes they tend to overload.And you can’t miss the fish taco with the beans and chips—total perfection. March 1, 2026 i’m updating my review to include tonight‘s delivery. Absolutely outstanding. The value was great as well. I ordered the high protein bowl with double pan seared shrimp. The flavor was outstanding. The delivery was so fast. And the packaging of my meal was just perfect. Thank you to the delivery driver. That did such a good job and the person that prepared my food.
