Every dish was perfectly executed and the portion sizes were healthy without being too much. We were looking for a place to dine in Aspen that didn’t have an hour wait. Prospect was listed as closed online but we were surprised to find they were open and willing to seat us. The veal was simply delicious. The Campanelle pasta blended summer flavours with lots of depth. We added chicken to ours for extra protein.
An absolutely outstanding restaurant in every way, located inside the iconic Hotel Jerome in Aspen. Super chic and elegant, with high ceilings that create a spacious feel and a stylish, impeccably curated decor. The service was flawless — attentive, professional. The food was simply delicious. The high ceilings, yet quiet/ hushed tones, partial view of the mountains and decor are like a warm hug. Service and menu offerings were spot on.
