I thought it was OK. It's not truly Pho a good substitute. Beef was not that great, looked like sliced beef you buy in a deli. Great atmosphere & staff.
I went to Pho 553 intending to get vermicelli like I normally do at Vietnamese places (it's my safety) but instead I took a chance and got the chicken meatball pho. First of all the pho itself was amazing! Delicate yet powerful, fragrant, delicious. Truly they know what they're doing. The chicken meatballs were scrumptious. Our 2nd time. Disappointed again. The Pho broth is tasteless. The rice was so overdone that is was a ball of mush. Service is very good, but the food needs help.
The new spring roll bar is amazing. Prepared in bite size pieces with great flavor and freshness. Pork belly and lobster will be repeated.
I really like this restaurant. It's not your traditional Vietnamese diner. It has fresh and creative ingredients and some dishes that you might not expect. I don't live in Palm Springs but I visit a couple of times each year and Pho533 is on our "must visit" bucket list each time.
