I am not a big fan of eggplant, but when I saw a write up about Capone���s Eggplant Appetizer in Traverse Magazine (March 2007) I decided to stop in and give it a try. OMG! It is out of this world; simply the BEST Eggplant I have ever had. The presentation was beautiful; a tower of grilled eggplant layered between a mixture of fresh ricotta, spinach and sun-dried tomatoes, served on a bed of Capone���s homemade Marinara. DELICIOUS!
