I grew up in New Mexico but live in Atlanta. I visit Colorado Springs often to see family and I always request a meal at La Casa Fiesta for one main reason... the New Mexico Style Enchiladas with blue corn tortillas and a sunny side up egg on top. It's absolutely delicious and so authentic. I eat enchiladas all over the country and these are by far the best! I get the spicy beef but chicken are good too. Food, service, ambience and prices were 5 stars. Visiting from out of state and referred by friends and was not disappointed. Owner came by the table and introduced herself and our server was polite and attentive. We will be back.
Some people might like the food. I'm more fond of Tex-Mex. It was okay but nothing to write home about. Interesting thing. I tried to speak to the owner/manager about the people who smoked and had been seated next to us (I was still recovering from a major health procedure and illness). I just wanted to suggest to him that he might start putting smokers on one end and non on the other until they ran out of room in the middle.
