I have finally found a place that does a perfect eggs Benedict. Perfectly poached eggs atop 2 of the thickest slices of ham, resting on a bed of arrugala, which gives it a unique kick, all under a light coating of Dijon hollandaise sauce which just ties all of the flavors together.
