Humboldt Fog rolls across the palate in such a subtle way that it envelopes you before you realize what has happened. To call it "cheese" belittles how special it is. This goat "bleu" is delicate and tangy without being overpowering. First tasted it in an artisanal sampling at Righteous Cheese at Union Market and was delighted to spot the signature vegetable ash line again at Wegmans and Whole Foods Market. I can't have cow milk cheese, so I have been trying goat and sheep milk cheeses lately. Just tried your Lamb Chopper and Humboldt Fog today and both are exquisite! The Humboldt is perfect for spreading on crackers and the Chopper is a great replacement for hard cheeses like parmesan. I can't wait to try it on pizza and pasta.
