I hadn’t eaten here for years so decided it was time to make a visit. Unfortunately I left very unimpressed with my build your own combo. My cheese enchilada was bland and cold, the chili rellano was undercooked and tasted strongly of vinegar. The shredded beef was the high point of the evening with good flavor and texture. Lastly the green chili was just ok. For a restaurant with the reputation of Blue Bonnet I really expected more.
Today we has enchiladas mole and chili-lime chicken tacos on crunchy shells. Yummmm!

We moved from Denver a few years ago and this is a must when we come home! The green chili is to die for! Unfortunately we were there early and they were out of the bacon wrapped avocado. That was unfortunate! Sangria was great too. And they serve REAL sopapilla https://images.app.goo.gl/Y4f6ZXpzgWLHCBTe9 which are amazing, not flat fried tortillas! You will not be disappointed. Quality is always the same.
Everything, especially the green chili rellenos. (Old #7 on the menu back in the day!) I have been dining here practically since it opened and have never, ever had anything except a great meal!
