Wow, I had the pleasure of visiting with Wild Thang Custom Meats food truck at a local farmers market and , man, they did not disappoint. If you're not familiar with this little food treasure; Boudin Balls are delicious little snacks from South Louisiana where balls of Boudin Sausage meat are rolled up then coated in breadcrumbs and fried. I was sceptical at first but after speaking to the wonderful young lady at the helm, I jumped in face first. Delicious! Fried to absolute perfection!
Best processor in North Louisiana. Gene knows the wildgame processing business. He has my business for life or until he retires. I highly recommend Gene and his staff.
