Although the law firm where I am employed does not have much need for a process server, when we do we use WesTex Legal. The owners are very knowledgeable about the whole process, from the issuance of the services to the actual serving of the document. I know for a fact that one of the owners, Ryan, worked on Christmas Eve in order to serve someone.
