I was feeling greedy yesterday & couldn't choose between the Fried Catfish & Hungry Man Breakfast Platters from Upland Diner. I'm so glad that I didn't! Preheated the oven before it arrived & threw the fish, bacon, 1 link, toast, eggs, & a bit of potato in the oven. Doctored up the grits with some creamer, butter, salt & pepper. That was a super satisfying brunch! Idk why the sausage link was stupid delicious. Catfish was perfectly seasoned, not saturated with grease, & still crunchy when it arrived.
