We are visiting Colorado Springs for the 4th time and for the 4th time we dined at Uchenna. In my mind it is the best restaurant in Colorado Springs by far. And this is not only about food, which is amazing, but about atmosphere. Everything that Maya, the owner of the place, does there, she does with love. She herself serves the tables and within smalltalk there are plenty of opportunities to find out about Ethiopian culture and food.
