Torchy's Tacos started in 2006 with a mobile trailer, a little red Vespa, and a man with a passion for good food. The founder, Mike Rypka, left an executive chef position to chase his dreams by investing everything he had into Torchy's Tacos. With a new, experimental menu ready to serve but no mouths to feed, Rypka jumped on his Vespa and started throwing out samples in an attempt to draw customers to his trailer. Must have been an off night because this restaurant has great reviews. We started with queso and the chips were very stale, almost chewy. I asked the server if they might have fresher ones in the back and she replied “not at this time” or something equally indifferent. The queso itself was meh. The tacos were all covered in their respective sauces instead of the sauces being served on the side, which bothered my son who prefers to leave it off. All of staff at the Waco location were great, but we were there today. I want to give a shout out to the food runner, Gail. She went above and beyond to make sure that we were all taken care of and spend time chatting with the grandkids.
I enjoyed my meal.
