I live right on 6th Ave in Tacoma and walk past The Gourmet Niche every day, seeing my favorite food trucks load up for the day. I reached out to owner, Chef Bette Ann, who was very kind and arranged for me to meet there for a quick tour of the space. There were plenty of work spaces, refrigerators, ovens and storage racks.
