Quality Guanciale is not easily sourced in the USA. I have ordered from over a dozen different purveyors including some highly reviewed NYC locations. The Terra di Siena guanciale beats them all. A fantastic product and essential when making my favorite Italian dish - Gricia.
I ordered Tuscan Pecorino, Pancetta & Guanciale. I was very impressed. Highly recommended.
