When the store opens at 11, the expectation is that you should be able to walk in at 11:05 and order food. NOT to be told that it is a half hour wait because of outgoing catered orders. Perhaps you guys need to take a hint from the other barbeque establishments that have been running successfully for years in the area and figure out how to account for both catered orders and dine-in customers at the same time.
