Panera is not the same as it used to be. They don’t make their bread fresh in house anymore…it is par-baked at a third party company, frozen and then sent to the stores for thawing and baking. Unfortunately, my bread bowl seemed to be just a tad underbaked. This happens when the bread is not thawed correctly and baked too early, leaving a chewy and dense interior. Yuck.
