I'm new to butcher shop buying. If your new, inform the butcher when your greeted. I went in blind and clueless the first 2 visits. On the third visit I spoke with the butcher and had an entirely different experience. They know the answers and elaborate even on the questions you don't know to ask. The smoked chops and ham slices are unbelievably good. I asked for house marinated ribs and house marinated chicken wings and let me tell you everyone from age 8 to 84 in my family enjoyed them.
