By adding flavor to tomatoes. At least the essence of flavor. These, like all others in the supermarket, taste like. . . .water. I grow heirloom tomatoes for over 20 years. I know this is not the best comparison, because homegrown always tastes better, just for that instant fresh advantage. I also understand the challenges of getting a fresh product to market with a predictable shelf life and to avoid heavy losses. But if you are counting on a tomato flavor, these will not cut it.
