Very few chefs have the talent and power to haunt you and make you dream about their creation long after you've had it. And Eric Ripert is just that special chef. His uni chawanmushi literally haunts me till this day. I dream about that dish. And all other fine dining cuisine is measured against the standard he has set for me. Every dish was perfectly executed!
