I use smoked ham hocks along with smoked sausage. I boil the hocks in water for an hour or so, as I am getting the other seasoning ready. When everything is ready to go into the pot, I use the ham hock water to cook the beans in. What a great dish.
I grew up on this. I wish they had it out here in Oklahoma. Or can deliver it.
I grew up on Camellia Beans when I left Louisiana to move to California in 1968 trust me I miss my Red beans, I was not use to California Red beans��
Raised on them, now 63 & retired, my wkly staple!!!
